Obtained results of colour objective estimation (verified statistically) displayed that the addition of citric and ascorbic acids caused significant changes in colour parameters L*, a*, b*. The increase of antioxidants concentrations higher redness of colour in products and caused stabilization of carotenoid pigments. However, citric acid showed stronger influence on durability of pulps colour than ascorbic acid.Pozycja Open Access Wstępna ocena spożycia błonnika pokarmowego przez uczennice szkół średnich w Szczecinie(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Seidler, Teresa; Mierzwa, Mariusz; Woźniak, Magdalena; Ilczuk, Magdalena; Marchlik, Monika; Masternak, Danuta; Misiarz, Karolina; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Podstaw Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w SzczecinieThe aim of the research was to determine level and sources of dietary fiber (DF) in daily nutrition intake among teenage girls (16–18 age) from Szczecin. According to recommended level of DF, determined average level was much lower and comprised of 45.6% of daily requirements. Source and amount of DF in composite ration were as follows: cereal products 38% and vegetables with fruits 38%. Moreover, content of energy, proteins, carbohydrate, fat and cholesterol were additionally determined in order to compare with dietary guidelines. All stated above elements were present in insufficient quantity and did not correspond to current nutritional guidelines (mean percentage ranged form 54.2 to 80.4%).Pozycja Open Access Porównanie ocen zawartości chlorofilu chlorofilometrami SPAD-502 i N-tester(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Pacewicz, Krzysztof; Gregorczyk, Andrzej; Katedra Uprawy Roli, Roślin i Doświadczalnictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Uprawy Roli, Roślin i Doświadczalnictwa, Zachodniopomorski Uniwersytet Technologiczny w SzczecinieThe present study was the determination the correlation between values of two chlorophyll meters: SPAD-502 and N-tester, indulging in comparison scientific results with these two different devices. To this purpose, the six kinds of cereals in stage of heading were examined on “index of greenest”: oat, barley Rataj and Nagrad, triticale, wheat and rye. Statistical analysis carried out afterwards demonstrated that, between measurements received from two chlorophyll meter founded high efficiency of linear regression. To recount values between the chlorophyll meters can be use equation: (N-tester reading) = 14.5·(SPAD reading) – 73.4.Pozycja Open Access Ocena sposobu żywienia kobiet w okresie menopauzalnym - zdrowych i z leczoną osteoporozą(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Goluch-Koniuszy, Zuzanna; Radziszewska, Magdalena; Dęga, Sylwia; Zakład Fizjologii Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Fizjologii Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Fizjologii Żywienia Człowieka, Zachodniopomorski Uniwersytet Technologiczny w SzczecinieThe goal of this research was the evaluation of nutrition and life-style of healthy women (aged 42–56) and women with treated osteoporosis (aged 33–60). The research was conducted in the form of a questionnaire, concerning the life-style and anthropometric data. The quantity and quality of three-day menus were also under evaluation. Only in 53% of women without osteoporosis and in 33% of women with osteoporosis a proper BMI index was ascertained. The life-style and the way of nutrition of women without osteoporosis and with osteoporosis was similar and differed from recommended in the osteoporosis prophylaxis and in its treatment. The use of condiments, low physical activity, improper structure of consumption of nutrition products and resulting from it deficiency of nutrition components protecting against the development and intensification of osteoporosis (Ca, Mg, Zn, C and B6 vitamins) and excess of ingredients which are favorable to its formation (animal protein, P, Na), was ascertained. Taking into consideration the above conclusions it seems necessary to educate society from the earliest possible age in the pro-health way of nutrition as a prophylaxis of osteoporosis in the aspect of treating it with proper nutrition.Pozycja Open Access Porównanie wzrostu i plonowania truskawki odmiany 'Aga' uprawianej w glebie zasobnej, nawożonej nawozami o zróżnicowanym składzie chemicznym(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Ochmian, Ireneusz; Grajkowski, Józef; Popiel, Joanna; Strzelecki, Roman; Ostrowska, Krystyna; Katedra Sadownictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Sadownictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Sadownictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Sadownictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Sadownictwa, Zachodniopomorski Uniwersytet Technologiczny w SzczecinieThe experiment conducted at Pomology Research Station of Szczecin Agricultural University permitted to compare the influence of the three fertilizers which have the differentiated chemical composition. Each fertilizer is water-soluble and can by use for fertilization, plant growth and yielding of ‘Aga’ strawberry cultivar. The used fertilizers were Agrasol F316, Kristalon orange and Ammonium nitrate which solution, used for the watering, had the highest EC 2.05 mS.cm–1. Plants fertilized by Agrasol F316 had the biggest leaf area from the one plant (first year of plant growing 2113 cm2, second year of plant growing 3377 cm2), and the biggest area of one leaf (first year of plant growing 81.3 cm2, second year of plant growing 70.2 cm2). In the second year of plant growing plants of this combination also had the highest yield of fruits from the one plant (250 g), in the first year of plant growing they had the highest mass weight (9.69 g). Fruit picked from the plants which were fertilized by Agrasol F316 and Ammonium nitrate had the highest firmness (198–261 G mm–1).Pozycja Open Access Wpływ metod konwencjonalnych i ekologicznych uprawy pszenżyta na wartość wypiekową mąk i jakość pieczywa(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Iwański, Robert; Wianecki, Marek; Tokarczyk, Grzegorz; Stankowski, Sławomir; Katedra Technologii Żywności, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Technologii Żywności, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Technologii Żywności, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Katedra Agronomii, Zachodniopomorski Uniwersytet Technologiczny w SzczecinieThe bakery properties of five Germany origin species of triticale from conventional and ecological tillage system were tested in bakery control process. The qualitative features of triticale bread depended on species of triticale and method of tillage system. Both, the bakery properties and sensory evaluation a conventional tillage system bread were higher. The addition of 1-moll lactic acid to bakery processing enlarged porosity and total baking weight losses, but not influencing on sensory evaluation of bread. The TPA hardness of ecological tillage system bread were about 15% higher (average value – 676.9[G]) than conventional tillage system bread (average value – 576.4 [G]). Similar results were received in gumminess and chewiness of TPA tests. The addition of 1-moll lactic acid significant influenced on results in the TPA tests.Pozycja Open Access Wpływ systemów uprawy roli, gęstości i terminu siewu na zmienność plonowania odmian pszenicy ozimej(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Weber, Ryszard; Zakład Herbologii i Technik Uprawy Roli, ul. Orzechowa 61, Instytut Uprawy, Nawożenia i Gleboznawstwa w PuławachThe investigation aimed at analyzing the variability in winter wheat cultivars yielding as depending on the tillage system, density and term of sowing. There were used two systems of tillage: conventional (plughing) and simplified. In each of them regarded were the following factors: I – terms of sowing: a) 14–16 September (early sowing); b) 1–3 October (optimum sowing); 15–17 October (delayed sowing); two sowing densities: A – 3000 grains per a square neter; B-450 grains per a square meter; III – winter wheat cultivars: Finezja, Rywalka, Kobiera, Satyna, Bogatka, Zawisza. At conventional tillage the optimum sowing term appeared conducive to stable yields of winter wheat, while delayted sowing term at simplified tillage and early at plough tillage were bringing about a considerable differentiation in the yields of the cultivars tested. The cultivar Finezja sown at the early term in decreased density show a tendency to produce higher yields as compared to those obtained at the optimum term, irrespective of the system of tillage. On the other hand, higher yields of the Satyna cultivar were obtained in conditions of early sowing term and simplified tillage. Cluster analysis revealed that the yields of Finezja anad Rywalka cultivars were depending on the sowing density to a lesser degree than those of the other cultivars tested.Pozycja Open Access Wpływ sposobu pakowania na wybrane zmiany fizyczne bananów w czasie ich zamrażalniczego przechowywania(Wydawnictwo Uczelniane Zachodniopomorskiego Uniwersytetu Technologicznego w Szczecinie, 2009) Szczepanik, Grzegorz; Bakan, Agata; Lisiecki, Sławomir; Zakład Chłodnictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Chłodnictwa, Zachodniopomorski Uniwersytet Technologiczny w Szczecinie; Zakład Opakowalnictwa i Biopolimerów Zachodniopomorski Uniwersytet Technologiczny w SzczecinieGenerally, fruits are characterized by a short-term stability as a result of a fast running ripening process. The main aim of the research was to define the influence of kind of packaging on some physical changes of the bananas during frozen storage. The bananas were stored in Air (P), Vacuum (V) and Atmosphere Modified (MAP) in time three months in –25°C. Kinetics of texture changes was studied on a whole banana fruit and a vertical selection of banana. The texture properties can include several parameters: hardness, adhesiveness, springiness, cohesiveness, gumminess and chewiness. Texture measurements were made using TPA test. The whole banana fruit characterize with decrease such parameters as hardness, adhesiveness, gumminess and chewiness. Vertical selections of banana characterize with decrease such parameters as hardness, gumminess and chewiness. However, the growth of adhesiveness and cohesiveness succeeded. The results indicated that kind of packaging not influence on amplification banana fruits.
